In my previous post, I mentioned that you want to be eating starchy veggies if you’re looking to put some pounds on, so it makes sense that this list will be void of these and focus more on green, leafy veggies.
What makes vegetables so good for this diet purpose? They are full of vitamins and minerals, and much of their caloric value is made up of fiber and water. For the volume of these that you eat, the caloric value is rather low. They’ll fill you up faster but won’t put you over your daily calorie count when eating them in great amounts. Carrots
Carrots are full of beta-carotene and fiber. They help you digest your food more efficiently, fill you up, and are full of nutrients. What makes them such a great option is they are so versatile and convenient. You can snack on them either hot or cold, cooked or uncooked, and are a great addition to any salad. I personally like to keep a bag of baby carrots to eat raw as a snack through the day.
Celery
Another one that is so convenient, cooked or uncooked! These, along with carrots, are great healthy stick snacks you can dip in a low-fat veggie dip and snack through the day. They are also made up mostly of water, so while they will fill your belly, you aren’t taking on many calories.
Cucumber
These vegetables are full of water and fiber and contain no fat nor carbs. You can prepare these for basically any occasion but are especially nice on a salad. You can cut them length-wise to make dipping sticks, or slice them up into quarters to add to any dish.
Leafy Greens
I make sure that I eat a salad at least once daily, so I’m certainly getting my dose of leafy greens – and you should, too! A green salad has no fat and is chock full of phytonutrients that keep your body systems running in top shape and keeping your metabolism up. Try to fit a salad in with lunch or dinner daily, and stay away from fatty dressings!
Cauliflower
This veggie is low density, contains no fat, and has tons of fiber content. Not to mention, they’re delicious! Like the other options on here, they are so versatile – serve them hot or cold, cooked or raw!
